Well hey there! Long time no see! If you haven’t read my latest update to see what a busy bee I have been the last couple of months, you can do so here. Considering how busy I have been I have been wanting to start a new Monthly Feature on the blog called #PinterestLife where I will blog about some awesome things that catch my eye on pinterest as well as things that I try out in real life. Today’s #PinterestLife post is all about some delicious looking Vegetarian (and Vegan Recipes I have saved to my Vegetarian Recipes Pinterest Board. (You can check out my other Pinterest boards here.) Just as a fun fact, I have now been eating vegetarian for 3 and a half months!
Tacos have been a meal that I have eaten quite a few times since becoming vegetarian and I have actually followed this recipe. I made them without the cilantro and Black Bean Burgers These Avocado Tacos a simply delicious and really easy to make!
I love a good curry but we don’t often make them without meat in my household. Plus as someone who works all day with a lot of travel time I don’t always have the time to make a long-cooking curry. That is where this yellow split pea Dahl comes in. I saw in the comments of the pin that, although the recipe calls for a rice cooker to cook it, you can cook this recipe in a slow cooker for 4 hours. The recipe comes from the Vegetarian Times website which also has a whole myriad of vegetarian recipes!
