I hope you have had a fabulous start to your weekend. Today I was in the mood for a little something sweet and some experimentation. So I have made my own recipe for a Double Choc Cookie Pizza with white chocolate chips.
There’s really nothing tricky about this recipe – you just whip up the cookie dough as you usually would and your 90% of the way there. However instead of rolling the dough into balls and lining them up on a baking sheet, grease a pizza tray (make sure it has small holes in the bottom otherwise use baking paper) then chuck in the dough!
Here is my recipe (adapted from Alison Holst’s Cookbook):
1 cup white sugar
1 cup brown sugar
2 large eggs
2 cups flour
2 tablespoons of cocoa powder
1 tsp baking powder
1 cup white chocolate buttons
Turn the oven onto 180°C. Melt the butter on the stove until just liquid. Add the sugars and beaten egg and mix through thoroughly with a wooden spoon or fork.
Sift the flour, baking powder and cocoa powder into the butter and sugar mixture. Add the chocolate chips and stir until well combined (or do what I do and just throw it all the dry ingredients in without sifting).
Press the dough down into lined pizza pan, until the entire base of the pan is covered in an even layer of cookie dough. Then pop the pan in the oven and bake until the cookie is nice and golden on top. (Approx 20-25 minutes depending on how thin the cookie pizza is).
The finished cookie is perfect for dessert, parties or days when rolling 24 balls of dough will test your sanity. If you’re feeling a little decadent, serve the slice cookie with a little vanilla ice cream and caramel sauce – you’ll be in cookie heaven!
Variations: Use dark chocolate buttons with or without cocoa powder in mixture. If you aren’t adding cocoa you still choose either white or dark chocolate buttons, or even m&m’s!! You can also add some orange juice/essence into the mixture for a bit of orange/choc goodness!
