Well hey there! Long time no see! If you haven’t read my latest update to see what a busy bee I have been the last couple of months, you can do so here. Considering how busy I have been I have been wanting to start a new Monthly Feature on the blog called #PinterestLife where I will blog about some awesome things that catch my eye on pinterest as well as things that I try out in real life. Today’s #PinterestLife post is all about some delicious looking Vegetarian (and Vegan Recipes I have saved to my Vegetarian Recipes Pinterest Board. (You can check out my other Pinterest boards here.) Just as a fun fact, I have now been eating vegetarian for 3 and a half months!
Tacos have been a meal that I have eaten quite a few times since becoming vegetarian and I have actually followed this recipe. I made them without the cilantro and Black Bean Burgers These Avocado Tacos a simply delicious and really easy to make!
I love a good curry but we don’t often make them without meat in my household. Plus as someone who works all day with a lot of travel time I don’t always have the time to make a long-cooking curry. That is where this yellow split pea Dahl comes in. I saw in the comments of the pin that, although the recipe calls for a rice cooker to cook it, you can cook this recipe in a slow cooker for 4 hours. The recipe comes from the Vegetarian Times website which also has a whole myriad of vegetarian recipes!
These little gnocchi are so darn cute! Plus you can make them out of kumara (sweet potato) or pumpkin. Be prepared for a longer preparation time on this dish as you are making pasta from scratch!
Chilli con carne was easily one of my favourite meals before I went vegetarian, and I think that has a lot to do with growing up in Spain. I’ve never quite gotten the flavours right since taking out the meat from the dish so I am looking forward to what this recipe has to offer. Extra bonus is that this recipe is also Vegan friendly!
Pizza, pizza, pizza!! Mmmm I love me a good tasting Margherita pizza any day over all the meat pizzas in the world. I have had pizza quite a few times since going vegetarian but it has always been from DOminoes (New Zealand Pizza shop). This recipe for a homemade Margherita pizza look absolutely delicious and I can’t wait to try it out some time this summer!
Potato tots 4 life!!! Maybe the healthier version of the broccoli tots is something I should be replacing potato tots with? Hmmm we shall see, however these do look really good! I think I could convince my mum to make these sometime too!
7. Vegan Blueberry Lime Cheesecake
Mmm I saved the very best for last, and of course it is a dessert so I am glad that it is a Vegan one too! Although it isn’t something you can have as a meal, dessert is definitely a very important aspect of dinner entertaining. I am really keen to make this Vegan Blueberry Lime Cheesecake for our family Christmas this year and see if I can convince anyone else to go vegetarian.
